These little babies don't just look pretty, they taste delicious too! Beetroot is known to contain nitrates along with magnesium, iron, vitamin C and folic acid so adding a concentrated powder dose to your recipes is an easy way to get an added boost of all those good vitamins and minerals.
Things you Need
Makes 7-8 balls depending on size
- 1/2 cup Paleo Hero Porridge Mix
- 200g dried dates
- 1 cup dessicated or shredded coconut
- 1 heaped tbs coconut oil
- 1 tsp vanilla essence or vanilla paste
- 1 tsp ground ginger
- 1 tbs beetroot powder (we like to use Bioglan or Honest to Goodness)
Method
In your food processor, blend the dates and coconut until it forms a dough.
Add remaining ingredients and blend until combined.
You can add a bit extra porridge mix if your dough is too wet, or some extra coconut oil if it's too dry. You can also add more beetroot powder for a deeper purple colour.
Roll into balls (we make 40g size) and store in the fridge or freezer.
You can leave these naked to show off their pretty colour or blitz up some Primal Choc Granola to roll them in for a choc beet twist!
