If this grain free banana bread could make you coffee, you'd just about marry it. Loaded with nourishing ingredients this bread is gluten free baking at it's finest. It is an epic paleo breakfast, snack or lunchbox option. To top things off, this banana bread is entirely gluten free, grain free, refined sugar free and is keto and paleo friendly. Let's get baking!
Things You Need
- 2 over ripe bananas
- 3 eggs, VEGAN FRIENDS: Sub flax/chia egg or your fave egg replacers
- 4 tbsp cashew butter
- 1 tbsp vanilla
- 1 tbsp honey or maple syrup
- 1/2 cup of coconut flour
- 2 tbsp cacao
- 1 tsp turmeric
- 1 tsp cinnamon
- 1/4 tsp each of ginger, nutmeg, cardamom and cloves
- 1/2 tsp of baking powder
- 1/4 tsp baking soda
For the topping: 1/2 cup of Paleo Hero Primal Muesli
Method
Pre-heat oven to 175’C/350*F
Grease or line a loaf pan and set aside.
Place all ingredients (apart from the toppings) into a food processor or blender and process until smooth and well combined. You could also just mash or stir in a bowl if you prefer.
Pour into your prepared loaf pan.
Sprinkle with Paleo Hero Primal Muesli.
Bake for 30-40 minutes until a toothpick has just a few moist crumbs attached when inserted into the centre.
Slice and devour.
