HEALTHY CHRISTMAS ROCKY ROAD

Who doesn't love a good rocky road? The problem is that most store-bought versions are going to be choc-full of all the junk. This paleo version not only tastes delicious but is gluten free, dairy free and without the highly processed bits. This the perfect healthy dessert to bring along to holiday parties or just enjoy on your own... with Christmas music on... on a Friday night. Paleo Rocky Road... let's do this!

You will need to get your mits on a cooking thermometer. Any kitchen store, camping shop or Bunnings should have the hook up.

Things You Need

For the Rocky Road
  • 200g dark chocolate (we like Lindt 90%)
  • 1/4 cup dried cranberries
  • 1 cup Paleo Hero Muesli
  • Paleo Marshmallows*
  • OPTIONAL - 1/2 cup pistachios, 1/4 cup toasted coconut
For the Paleo Marshmallows
  • 1 cup water
  • 3 tbsp gelatin powder
  • 200g raw honey (or pure maple syrup)
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • You can use natural food colouring like beetroot powder or pink pitaya powder to give it that pink colour!

Method

To Make the Marshmallows:
Place 1/2 of water in a bowl and sprinkle over gelatin then set aside to 'bloom'.

Combine remaining water, honey and salt in saucepan over low heat and bring to 115C (usually 8 minutes or so).

Add gelatin mix to stand mixer or start hand beating. Slowly add hot honey mixture and continue to beat until combined. Add vanilla and colouring if using and leave to beat for 10-15 minutes until mixture is thick and fluffy. 

Pour mixture into lined tin and leave to set for 1 hour in the fridge. Once set you can use kitchen scissors or a knife to chop into whatever sized pieces you want in your rocky road. 

To Make the Rocky Road:

Melt your dark chocolate either in the microwave or over a double boiler on the stove until smooth. 

Line a baking dish with baking paper and place chopped marshmallows in.

Sprinkle over 1/2 the cranberries and muesli then pour over the melted chocolate. Sprinkle the rest of the muesli and cranberries on top, then place in the fridge to set. 

Once set, chop into squares and serve. This will last for up 7 days in the fridge or up to 3 months in the freezer.
