We have eaten at least 50 of these bad boys here in the office the last couple of weeks. They are addictively good! Our take on the classic gingerbread cookie is gluten, grain, dairy, egg & refined sugar free and they are even vegan! You could not get a cleaner cookie and we think these could be our best recipe yet! Enjoy!
Things you Need
Makes 12-18 cookies depending on your cutters
- 1 1/2 cups Primal Pancake Mix
- 1/4 cup tapioca flour
- 2 tsp ground ginger
- 1 tsp mixed spice
- 2 tbs melted coconut oil
- 1/4 cup maple syrup
Method
Preheat oven to 180C. In a large bowl, mix together all the dry ingredients.
Add coconut oil and maple syrup and combine to form a sticky dough.
Wrap dough in cling film and leave in fridge until firm.
Once dough has chilled, roll out to 5mm thick and cut your cookies using your favourite Christmas cookie cutters.
Transfer to a lined baking tray and bake for 10 - 12mins.
