LAMINGTON NICE CREAM

The annual Lamington Drive in primary school was a real highlight in our family (god they were good lamingtons!) mainly because they are delicous but very annoying to make! This incredibly easy Lamington Nice Cream pays homage to our favourite Aussie treat without sending coconut all over your kitchen (you're welcome). We've added some extra cacao here because the chocolate part of the lamington is the best part but you can leave out if you feel like it. 

Whip up a batch to enjoy this Australia Day, after throwing some snags on the BBQ of course!

Things you Need
Serves 2

  • 2 large frozen bananas, chopped
  • 1 tbs cacao (optional for those chocolate lovers)
  • 1/4 cup Paleo Hero Primal Choc Granola 
  • 1/4 cup cold coconut cream
  • 1/2 tsp vanilla paste
  • 2 tbs maple syrup

  • desicated coconut and fresh raspberries for toppings

Method

In a high powered blender or food processor, blend all ingredients together except for coconut cream until you have a very thick and smooth mixture.

Slowly add your coconut cream until you have a smooth nice cream/smoothie bowl texture. You may need more or less coconut cream depending on your bananas. If you like your nice cream crunchy, add your Choc Granola at the end and pulse to make delicious crunchy bits.  

If your mixture is too runny, just pop back into the freezer until you get your desired texture.

Scoop into bowl and top with desicated coconut and fresh raspberries for that extra lamington touch.
