Ingredients
•⅓ cup coconut flour
•¼ tsp salt
•½ tsp baking powder
•½ tsp ground cinnamon
•¼ tsp ground ginger
•¼ tsp ground nutmeg
•2 bananas, mashed
•4 eggs
•2 tsp vanilla extract
•¼ cup maple syrup
•¼ cup coconut milk
•2 tbsp coconut oil, melted
•½ cup walnuts, chopped
•1 banana, sliced lengthways, to top
Method
Step 1 — Prepare the Tin
Preheat the oven to 180°C. Line a rectangular loaf tin with baking paper, allowing an overhang for easy removal.
Step 2 — Combine the Wet Ingredients
In a large bowl, whisk together the eggs, mashed banana, maple syrup, coconut milk, melted coconut oil and vanilla extract until smooth and well combined.
Step 3 — Add the Dry Ingredients
Add the coconut flour, salt, baking powder, cinnamon, ginger and nutmeg. Mix until fully combined, then fold through the walnuts.
Step 4 — Bake
Pour the mixture into the prepared loaf tin and smooth the top. Arrange the sliced banana over the batter. Bake for 30 minutes, or until the loaf is cooked through and a skewer inserted into the centre comes out clean.
Allow the banana bread to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.

Use very ripe bananas for the best natural sweetness and a moist, tender crumb. Allow the loaf to cool before slicing for cleaner pieces.
