Ingredients:
• 1 packet Paleo Hero Primal Bread Mix (350g)
• 6 large free-range eggs
• 2 tbsp apple cider vinegar
• 2 tsp ground cinnamon
• 1 tsp ground nutmeg
• 1 tsp mixed spice
• Zest of 1 orange
• 200g mixed dried fruit (sultanas, currants, and diced apricots)
• 2 tbsp honey or maple syrup (optional, for added sweetness)
• Coconut oil for greasing
For the Crosses:
• 1 tbsp coconut flour
• 1 egg white (whisk to a soft peak)
• 1/2 tsp vanilla extract
For the Glaze:
• 2 tbsp honey or maple syrup
Instructions:
1. Preparation:
• Preheat oven to 180°C fan-forced (200°C conventional)
• Generously grease a 12-hole large muffin tin with coconut oil
• In a small bowl, combine dried fruit with orange zest, set aside
2. Mix the Batter:
• In a large bowl, whisk together eggs and apple cider vinegar until light and foamy
• Add the spices and honey (if using) to the egg mixture and whisk to combine
• Place Paleo Hero Primal Bread Mix into a separate bowl
• Add the wet mixture to the dry mix and combine well
• Gently fold in the dried fruit mixture
3. Fill Muffin Tin:
• Divide batter evenly between the 12 muffin holes
• Fill each about 3/4 full
• Smooth tops with the back of a spoon
4. Add the Crosses:
• Mix coconut flour, water, and vanilla to form a thick paste
• Transfer to a piping bag or zip-lock bag with corner snipped
• Pipe crosses onto each bun
5. Bake:
• Bake for 25-30 minutes until golden brown and a skewer inserted comes out clean
• While hot, brush with honey glaze
• Allow to cool in tin for 5 minutes
• Gently remove and cool completely on wire rack
Storage:
• Best enjoyed fresh on the day of baking
• Store in an airtight container for up to 3 days
• Can be frozen for up to 1 month
