We all love a warm slice of delicious banana bread with our morning coffee but usually the store bought version is anything but healthy. Our clean version is high in protein from skin-restoring collagen, is gluten free, dairy free, grain free & free of processed sugars. The best bit, you only need to add a few ingredients, pop it in the oven and you're set. Get baking with our healthy gluten free and paleo protein banana bread.
Things you need
Makes 1 loaf
- 1 packet Paleo Hero Bread Mix
- 3 eggs
- 2 tbs apple cider vinegar
- 3 medium ripe bananas
- 1 tsp cinnamon
- 1/2 cup collagen powder (we use Great Lakes)
Method
Preheat oven to 190C or 170C (fan forced).
Line and grease a small loaf tin with coconut oil or olive oil.
In a large food processor or blender, blend together the eggs, apple cider vinegar & bananas until smooth.
Add the dry ingredients to the blender and blend gently to combine.
Pour batter into loaf tin and bake for 45-60 minutes or until cooked.
