PRIMAL GREEN BOWL

INGREDIENTS

 

Serves: 2

 

2 eggs
2 tablespoons melted coconut oil
2 garlic cloves, finely chopped
140g Paleo Hero Primal Muesli
10g pumpkin seeds
10g sunflower seeds
¼ teaspoon sea salt
150g kale, stalks removed and leaves torn into bite-sized pieces
50g (1 cup) baby spinach leaves
1 small cucumber
10g freshly coconut flakes
2 lemon wedges
1 avocado, halved, peeled, stoned and sliced

 

METHOD

 

Heat one tablespoon of olive oil in a large frying pan over a medium heat. Add a small amount of crushed garlic and cook, constantly stirring, until the garlic is fragrant and lightly browned. Add the pumpkin seeds and sunflower seeds and toast until lightly browned. Add a small amount of sea salt. Now add the kale and spinach leaves and mix to incorporate. Once the kale and spinach have slightly wilted remove from the heat and set aside. Slice a cucumber ready to serve

 

Pre boil eggs to save time when preparing breakfast. Alternatively poach eggs in a small saucepan with just enough water to cover. Remove the eggs with a slotted spoon ready to add to your dish.

 

Spoon a 70g serve of Paleo Hero Primal Muesli into serving bowls then, add Kale & Spinach mix plus cucumber slices & 1/4 Avocado to each serving bowl. Place the eggs on top of each bowl, garnish with coconut flakes and lemon wedges. Serve immediately while still warm.
