RAW KEY LIME SLICE

Summer in QLD (where our Paleo Hero home is) is bloody hot and even more humid so we try to avoid using the oven and heating up the kitchen at all costs! 

This Raw Key Lime Slice is creamy, zesty and super refreshing on a hot Summer's day. Bonus points for being super easy and no bake.

Things you Need
For the Chocolate Base
For Key Lime Part
  • 2 1/2 cups raw cashews (soaked overnight, rinsed & drained)
  • 1 cup shredded coconut 
  • 2 cups coconut cream
  • 1/2 cup coconut oil
  • 1/2 cup fresh lime juice (you can add more or less depending how zingy you like it)
  • 1/2 cup honey (you adjust to your preference as well)
  • Fresh lime segments and coconut for garnish

Method
We made this is in a standard size rectangular brownie tray.

Grease and line your tray leaving an overhang of baking paper so you can easily lift your slice out once it's set. 

For the base, blend dates in food processor until they form a smooth paste. Add Choc Granola and coconut flour and blend until well combined. Press evenly into your lined tray and place in the fridge to set. 

For the key lime part, add all remaining ingredients except for the lime juice and honey to a food processor or blender and blend until smooth. Add lime and honey until you reach your desired level of tang and sweetness. 

Pour mixture on top of base and smooth off the top. Place into the fridge or freezer and leave to set completely. 

Once chilled and completely set, remove from tray and cut into your desired size. Garnish with a small slice of lime and some extra coconut. 


These will last in the fridge for a week or freeze and defrost when you feel like piece.
