Paleo Savoury Muffins are the perfect snack to keep you feeling satiated and nourished. This gluten free grain free recipe is incredibly versatile so feel free to swap out the veggies for other options, if you prefer. These are a great low-carb brekkie or snack that can easily be frozen and grabbed when required.  

Things you Need

  • 1 packet Paleo Hero Bread Mix
  • 1/2 red onion, finely diced
  • 1 cup mushrooms, finely chopped 
  • 1 cup grated zucchini
  • 2 tbs apple cider vinegar
  • OPTIONAL: 1 cup grated cheese or crumbled goats cheese 
  • OPTIONAL: 1/2 cup chopped ham or bacon 


Preheat your oven to 180C and grease your muffin or cupcake tins.

In a small frying pan sauté the mushrooms, onion (and bacon if using) until the onion is translucent then set aside.

In a mixing bowl whisk the eggs and apple cider vinegar until frothy. 

Add the packet of Bread Mix, zucchini and onion mix (as well as cheese if you are adding this in) into the eggs and stir gently to combine. 

Spoon into your muffin tins to about 3/4 full as these will rise. 

Bake for 30 mins at 180C. Allow to cool on a wire rack before digging in.
