A gourmet twist on the classic favorite
Ingredients:
- 2 slices Paleo Hero Toasted Bread (from Primal Bread Mix)
- 75g ripe avocado, smashed
- 2 x poached Eggs
- 30g crumbled fetta cheese
- 2 tbsp beetroot cashew cheese
- 2 tbsp spiced nuts (roughly chopped)
- Fresh lime (juice of ½ lime + zest)
- 1 tbsp balsamic glaze
- Handful of fresh rocket leaves
- Pinch of sea salt and cracked black pepper
Instructions:
- Prepare the bread: Toast slices of Paleo Hero bread until golden and crispy
- Prepare the avocado: In a small bowl, mash the avocado with lime juice, salt, and pepper until creamy but still chunky
- Soft Poach 2 free range Eggs
- Assembly: Spread the smashed avocado evenly across both toast slices
- Layer the toppings: Dollop beetroot cashew cheese on plate and smear around the plate, then top with both slices of Avo Toast. Place poached eggs off to the side and sprinkle with crumbled fetta.
- Add crunch: Scatter spiced nuts over the top.
- Fresh finish: Top with rocket leaves and add lime zest
