Main Ingredients:
- 1 serving Paleo Hero Almond Porridge (prepared as below)
- ½ cup pear & rhubarb compote (recipe below)
- 2 tbsp almond butter
- 2 tbsp Primal Choc Granola, crushed for crumb topping
For the Enhanced Paleo Hero Porridge:
- ½ packet Primal Almond Porridge Mix (125g)
- 1 ripe banana, mashed
- 1 tin coconut cream (400ml)
- 1 tbsp chia seeds
- Pinch of sea salt
- ½ tsp cinnamon
- ¼ tsp cardamom
- ¼ tsp ground ginger
- Pinch of nutmeg
For the Pear & Rhubarb Compote:
- 2 medium pears, peeled and diced
- 2 stalks rhubarb, diced
- Juice and zest of ½ lemon
- 2 tbsp honey
- 2 tbsp water
Instructions:
Prepare the Compote (make ahead):
- Combine diced pear, rhubarb, lemon juice, zest, honey, and water in a saucepan
- Cook over medium heat for 10-15 minutes until fruit is tender and mixture has thickened
- Set aside to cool (can be made up to 3 days ahead)
Make the Enhanced Porridge:
- In a saucepan, combine mashed banana and coconut cream
- Heat gently, whisking until banana breaks down completely
- Add chia seeds, salt, and all spices - whisk through
- Gradually whisk in Primal Almond Porridge Mix until thick and smooth
- Cook for 2-3 minutes, stirring constantly
Assembly:
- Spoon warm porridge into serving bowl
- Top with a generous dollop of pear & rhubarb compote
- Drizzle with almond butter
- Finish with crushed Primal Choc Granola crumb
