Apricot & Thyme Stuffing | Paleo Recipes


We don't know about you but we think stuffing should always be a staple side when it comes to a roast chicken dinner. This apricot & thyme version is super easy, uses a mixture our bread and pizza base mixes and can be made stand alone, stuffed into your chicken or even into delicious indiviual stuffing rolls. 

Things you Need
Makes enough stuffing for 1 large roast chicken

  • 1/2 brown onion, finely diced
  • 1 cloved garlic, minced
  • 1/2 cup dried apricot, diced
  • 1 cup Primal Bread Mix
  • 1/4 cup Primal Pizza Base Mix (tapioca flour will work fine if you don't have)
  • 1 egg, lightly whisked
  • 1 tbs coconut oil
  • 3 sprigs of fresh thyme, finely diced or 2 tsp dried thyme leaves
  • salt & pepper to season


In a small frypan, sweat off onion and garlic in some olive or coconut oil for 5 minutes or until softened. Set aside to cool.

In a mixing bowl, whisk together Primal Bread Mix, Pizza Base Mix & thyme. Stir in onion, garlic and dried apricot.

Add coconut oil and egg then mix until it combines to form a thick dough like mixture. Add more bread mix if mix is too wet or more coconut oil if it's too dry. Season with salt and pepper to your liking. 

Stuff into your roast chicken and cook as per normal or transfer to a baking dish and cook until crispy and golden on top at the same temperature as your chicken. 

You can also roll the stuffing mix into balls and place in the bottom of your roasting tray so the balls will soak up all the delicious roast chicken juices!
