PALEO BUFFALO WINGS

Sticky chicken wings are a guilty pleasure that we often tend to avoid when trying to maintain a healthy diet and lifestyle. Luckily for you, we love them so much that we just had to create a healthy version so we can all enjoy this epic treat. These gluten, grain and dairy free paleo buffalo wings have the crunch of the forbidden KFC and a serious kick of flavour from our killer buffalo sauce. You are going to love them. 

Things you Need

For the Wings

For the Buffalo Sauce

  • 1 tbs olive oil or coconut oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, finely diced
  • 3 long red chillies (no seeds for mild, seeds of 1 chillies for medium, seeds of all chillies for spicy)
  • 1 jar tomato passata
  • 1 tbs dijon mustard
  • 1 tsp smoked paprika
  • 2/3 cup apple cider vinegar
  • 1 tsp coconut aminos
  • 1 1/2 tsp pink salt
  • 1/4 tsp black pepper

Method

SAUCE:
Heat oil in a medium saucepan and sweat down onion, garlic and chilli for 5 minutes or until soft.

Add paprika and mustard and stir for 1 minute.

Add all remaining sauce ingredients and bring to the boil. Simmer for 10-15 minutes or until the mixture has thickened and reduced by 2-3 cm. 

While the mixture is still hot, blend in a thermomix or with the stick blender until completely smooth. Set aside.

This can be stored in the fridge once cooled for 7-10 days.

WINGS:
Preheat your oven to 170C. Grab three bowls.

In two of the bowls add some pizza base mix and in the other add the eggs and lightly whisk.

Take your chicken wings and roll in the first bowl of pizza base mix to coat well.

Now dunk that wing into the egg mix and then back into the second bowl of pizza base to re-coat.

Repeat this process with all the wings then lay the wings in a single layer on a baking tray.

Drizzle with olive oil and pop into the oven.

Bake for 30 minutes then remove.

Spoon over some of the sauce and continue to bake for another 15 minutes.

Dig in.
