Choc Chip Zucchini Bread

 

Some will say that vegetables have no place hanging out with chocolate. To those people we say, boo. We raise you chocolate avocado mousse, sweet potato choc brownies, chocolate smoothies with hidden veggies. We think that whenever you can sneak in extra veggies to your life, that's a win. Just in case you really need to 'sneak' the zucchini in here, we promise that you cant taste it or see it, so your secret is safe with us. Go forth and eat it for breakfast, it's basically salad. 

INGREDIENTS

  • 1 cup loosely packed grated zucchini 
  • 1/4 cup honey/maple syrup
  • 1 packet Paleo Hero Bread Mix
  • 2 tbs apple cider vinegar
  • 6 eggs
  • 1/2 cup dark choc chips
  • 1/2 cup cacao 
  • 1 tsp cream of tartar 

METHOD

Preheat the oven to 180C fan forced (or 200C if not fan forced). Line a bread tin with baking paper. 

Whisk together the eggs, honey and apple cider vinegar until light and foamy. 

In a bowl add all remaining ingredients and mix well to combine and ensure zucchini is evenly mixed through. 

Add the egg mix into the bowl and stir well to combine completely then transfer into your bread tin. 

Bake for 30-45 mins until a skewer inserted in the centre of the loaf comes out clean. 

This loaf can be sliced and frozen once cooled or even made into muffins.
