CHOC MINT CHRISTMAS BLISS BALLS

If you love choc mint you are going to fall in love with these bliss balls. Whilst we think they are a great Christmas treat, they can absolutely be enjoyed all year round. No need to limit these balls of joy to the festive time of year. They make a fabulous gift and you can pimp them out with cranberries, rum, brandy or whatever other festive flavours excite you.

We love these paleo bliss balls. Not only they are delicious but they are also nutritionally balanced. They have 1. Natural carbohydrates from the dates 2. Healthy fats from the choc granola 3. Protein from the nuts, seeds and protein powder. Having the fats and protein alongside the natural sugar helps to level out our body's response to the carbohydrates and stops us from having a big blood sugar crash, which is what would happen if we just ate whole bunch of dates on their own. Let's get rolling!

Things You Need
  • 1 cup Paleo Hero Primal Choc Granola
  • 12 fresh medjool dates, pitted
  • 1/4 cup protein powder (whey, pea protein, hemp, collagen powder)
  • 1/4 cup raw cacao
  • 2-3 drops food grade peppermint oil
  • 1-3 tbs water as required
  • Shredded or desiccated coconut for rolling

Method

In a food processor, add the pitted dates and blend until they form a dough.

Add all remaining ingredients, except the water and blend well to combine.

If the mixture is too dry, gradually add 1 tbsp of water while blending until you get the consistency you need to roll into balls.

Roll in coconut.

You could also just press this into a baking paper lined tray like a fudge. Allow to set in the fridge for a few hours before eating. Can be stored in the fridge for up to 7 days of the freezer for up to 3 months.
