This paleo flatbread recipe is the perfect addition to a cheese and dip platter or the ultimate side dish to mop up a curry. It's got all the flavour without any of the junk and is completely gluten, dairy, grain, nut and yeast free. A delicious and healthy bread recipe, heck yes.
Things You Need
(makes 4 flatbreads)
- 1 pack Paleo Hero Pizza Base Mix
- 2 eggs
- 150 ml water
- 150 ml coconut oil
- 50 ml apple cider vinegar
- 40 g coconut flour for kneading
- 1/4 cup olive oil
- 1 tbs fresh rosemary, fined chopped
- 1 tbs fresh thyme, finely chopped
- 4 cloves garlic, minced or really finely chopped
- 1/2 tsp salt
- Optional - 1/2 cup chopped kalamata olives
Method
Preheat oven to 220C (fan forced) and line some baking trays with baking paper.
Make the pizza base as per the packet instructions and divide the dough into 4 even amounts.
In a small bowl mix the rosemary, thyme, garlic, salt & olive oil.
Roll out each flatbread to approx 1cm thick (or thinner if you want a crispier flatbread) and place on to the baking paper lined trays.
Spoon on top the olive oil and herb mix and spread evenly on top.
Bake for 15-20 minutes or until the edges are golden and crunchy.
Chop into wedges and serve or store in an airtight container in the fridge for up to 4 days.
