Chicken Nuggets are a crowd pleaser with kids and adults alike and these babies won't let you down. These gluten free and grain free chicken nuggets are easy to make in a big batch and you can freeze them either before or after cooking.

Things you Need

  • 4 Chicken breasts
  • 1 Pack Paleo Hero Pizza Base Mix
  • 2 Eggs, lightly beaten (or 1 cup full fat coconut milk, if egg free)
  • Coconut oil, macadamia oil, butter or ghee for cooking


Chop your chicken breasts into 'nugget' sized pieces.

Grab three bowls. In two bowls, evenly divide the bag of pizza base. In the other bowl add your beaten eggs.

Set up your bowls in a row with pizza base, then egg, then pizza base. 

Now coat your chicken breast pieces in the first bowl of pizza base mix, dunk into the egg mix, then roll again into the second bowl of pizza base mix. 

Do this until all your chicken has been coated. 

You can either bake or shallow fry your nuggets.

BAKE: Preheat your oven to 180C and line a baking tray with baking paper. Lay your nuggets on the tray in a single layer and drizzle with a decent amount of olive oil. Bake for 20-30 mins until browned on the outside and cooked through. 

FRY: Choose a small frying pan so you can get a decent coverage of oil on the bottom. Add enough oil to cover the base of the pan and heat over a low heat until hot. Add your nuggets being careful not too over crowd the pan. Cook on each side until golden brown and cooked through.
