ROSEMARY & SEA SALT CRACKERS

There's nothing better than popping crunchy crackers on a platter with dip and these one will have even the non-paleo peeps going back for more. Not only are these paleo crackers gluten, grain & dairy free but they are also nut free making them a great option for kids lunch boxes as well. These gluten free paleo crackers are perfect for the whole family or bring them to your next event!

Things you need
Makes approx. 20 - 30 crackers

  • 2 tbs chopped fresh rosemary (or 1 tbs dried)
  • 150 ml water
  • 1 bag Paleo Hero Pizza Base Mix
  • few good pinches rock salt
  • 150 ml coconut or olive oil
  • 50 ml apple cider vinegar
  • 2 large eggs
  • OPTIONAL: 2 tbs tomato paste 
  • coconut flour for kneading

Method

Preheat oven 200*C (fan forced). Line a large tray with baking paper. 

In a large bowl add the pizza base mix, rosemary & salt and set aside.

In a small saucepan add your oil, water and apple cider vinegar place over medium heat and bring to the boil. 

Remove from heat and add to dry ingredients. Mix well and set aside to cool.

Once the mix is cool to touch, add 2 eggs lightly whisked with the tomato paste (if using) and stir until combined.

Place the mix onto a bench or board, dust with coconut flour and knead together to form the dough.

Roll the dough out on your baking paper as thin as you would like your crackers to be. Bake for 20 mins to partially cook then remove and chop into crackers before baking again for another 20-30 mins until as crunchy as you would like. 

Note: You don't need to cut your crackers at the 20 minute mark, you can wait until they are cooked to our liking and just break them up, if you wish.
