HOT CROSS PALEO MUFFINS

We love a good Hot Cross Bun here at Paleo Hero HQ but the options when it comes to a decent gluten free hot cross bun are few and far between. We thought we'd take it upon ourselves to create our own version using the Paleo Hero Bread Mix. 

We love how versatile our Paleo Hero Bread Mix is. You can make everything from to Low Carb Carrot & Zucchini Loaf  to High Protein Collagen Banana Bread and loads more. Have a cleaner Easter with these awesome treats. 

Things you Need

  • 1 mashed banana
  • 1 pk Paleo Hero Bread Mix
  • 5 large eggs
  • 1 cup dried fruit (we used chopped figs, dates, apricots and sultanas) 
  • 1 tsp cinnamon
  • 2 tbs apple cider vinegar 
  • 1 tsp mixed spice 
  • 1/3 cup honey or pure maple syrup 

Method

Preheat your oven to 180C and grease your muffin tins as required.

In a food processor or blender blend together the eggs, apple cider vinegar, banana and honey until smooth. 

In a large bowl mix together all the remaining ingredients to combine. 

Pour the wet mix into the bowl of dry mix and stir to combine completely. 

Spoon into muffin tins evenly and bake for 25-30 mins. 

Top with a melted chocolate cross if desired.
