There's just something about the Colonel's secret recipe that leaves you wanting more. That crispy coating and the tender chicken inside has eluded us in our own kitchen (though if you are in Brisbane, Wilde Kitchen does an EPIC Paleo Fried Chicken that is hands-down, the best we have ever tried!), until now. This gluten free, dairy free and grain free chicken dinner will keep the kids AND adults jumping for joy! We are sure that a homemade coleslaw and potatoes and gravy would be the icing on the cake... or gravy on the chicken, rather.
Things You Need
- 4 chicken marylands (drumsticks or bone-in thigh will work too)
- 1/2 packet Paleo Hero Pizza Base (use the rest of the bag to do a half batch pizza)
- 1/2 tsp good quality salt
- 2 eggs
- 1/2 cup natural unsweetened coconut milk yoghurt (we love the Pure N Free brand) - you can omit this an add an extra egg instead.
- Olive oil to drizzle
Method
Preheat your oven to 160C and line your baking tray with baking paper.
Add the pizza base mix to a large bowl. In another bowl whisk together the eggs, yoghurt and salt until well combined.
Take your chicken and roll in the pizza base mix to coat well. Dunk into the egg mix and coat, then back into the pizza base mix again for a second time and coat well.
Pop the coated chicken on your tray in a single layer. Drizzle with olive oil then into the oven for 60-90 minutes until golden brown outside.
Dig in.
